Easy to Make, Magical to Eat
There is truly nothing better than a treat that is easy to make, healthy to consume and super appealing to kids’ eyeballs and taste buds. I’m talking about easy unicorn frozen yogurt bark 😀
This is truly one of the easiest FUN treats I have ever made for my kids. I am not generally very good at making food look cute or fun. But it’s pretty hard to fail at making this unicorn bark look exciting. All you need is dye-free, sugar-free food coloring to naturally add beautiful colors to your yogurt, and you have yourself a super cute snack any kid will want to bite into.
My toddler has been going absolutely crazy over this healthy unicorn yogurt bark since I made the first batch. She’s been eating multiple servings every day. And I don’t mind since it’s completely healthy and has a whopping 5 grams of protein per serving.
I just love a snack my kids can’t get enough of that is secretly packed with nutrition. Bye-bye food arguments and hangry melt-downs!
I have to admit, I first made this recipe because I needed a quick and easy win. Some weeks, coming up with a new recipe for the website is downright tough. I’ve got some pretty picky judges and they frequently turn down multiple recipes per week – even some that I think turn out great.
So as I was brainstorming what to make next, I was feeling a little discouraged and hopeless about any ideas that came to my mind.
Until I came across this incredible new phenomenon called “Unicorn Yogurt Bark”. I knew immediately that it would be a huge hit with my toddler. And it certainly has been!
I tell you this story to illustrate how easy it is to make and how easily kids fall in love with it. Because who doesn’t need more easy kid-friendly recipes in their busy life?
Even if you don’t have a lot of time to make a lot of things for your kids, I bet you can carve out 10 minutes to whip this up.
And there you go. Quick and easy win 🙂
When to Make Easy Unicorn Frozen Yogurt Bark
So when should you make this super easy unicorn frozen yogurt bark? Well, I could say summertime because it’s a frozen treat. But kids love frozen treats all year round.
I could say to make it when you can set everything else aside and spend an hour in the kitchen. Except it only requires 10 minutes to make.
I could say to make it when you need special unicorn desserts for your kids. Except these are healthy enough to be an every day snack.
What I will say is to make it several hours before you want to serve it because it does take a while to freeze.
You know when else this easy unicorn bark would be super fun? Make it for a unicorn-themed tea party. My kids would go crazy over that idea.
I would also say to make it anytime you are short on time, energy and ideas for healthy snacks for your kids. You can’t really beat this easy unicorn yogurt bark in terms of visual appeal, flavor and nutrition.
Actually, I would just say to go ahead and make some right now 😀 Then it will be nice and frozen at least by the 46th time your kids come asking for a snack today.
Ingredients
- Greek Yogurt: Yogurt is the base of this unicorn bark recipe. I use Greek yogurt, but you can also use plain whole milk yogurt.
- Coconut Milk: Coconut milk adds some creaminess to the yogurt. Be sure to buy canned coconut milk.
- Maple Syrup: Maple syrup is a great way to naturally sweeten treats without adding too much of it’s own flavor. Like to use dark maple syrup, but any shade is fine. Just make sure to buy pure grade A maple syrup.
- Vanilla Extract: Vanilla adds a bit of extra flavor to this easy unicorn frozen yogurt bark. Make sure to buy genuine 100% pure vanilla extract.
- Unsweetened Shredded Coconut: Shredded coconut sprinkled on top of the unicorn bark gives it a bit of decoration and a little more flavor. You can get unsweetened shredded coconut from Trader Joe’s or Amazon.
- Natural Food Coloring: Food coloring is the simplest way to get those beautiful unicorn colors in your yogurt bark. I like to use India Tree food coloring because it is plant-based and does not have any dyes or sugars.
Instructions
Step 1
Add all ingredients except shredded coconut to a medium-size bowl and mix until fully combined.
Step 2
Separate half of the yogurt mixture out into three separate bowls and color blue, pink and purple with dye-free India Tree food coloring.
Step 3
Line a baking sheet with parchment paper and spread the white yogurt in an even layer, roughly a 1/2 inch thick.
Step 4
Use spoons to dollop the colored yogurts all over the white until they are used up.
Step 5
Use a butter knife to swirl through the yogurt. Swirl over the entire area, but do not swirl any extra or all the colors will start to blend together too much.
Step 6
Optionally, sprinkle broken-up pieces of unsweetened shredded coconut all over the top of the yogurt for decoration.
Step 7
Place in the freezer for about 6 hours or overnight until yogurt is completely frozen. Once frozen, cut into rectangles and store in an airtight container or sealed bag in the freezer for up to one month.
Substitutions & Tips
- If you prefer to use honey, you can use that instead of maple syrup to sweeten the yogurt bark.
- You can substitute the coconut milk for regular cows milk if you prefer.
- Try substituting the vanilla extract with almond or lemon extract (cut it down by half) for a different flavor.
- Don’t worry about perfection while spreading the white yogurt out. Part of the beauty of this unicorn bark is all the swirly textures and colors.
- You can top this unicorn treat with whatever your kids like. In place of or in addition to coconut, you could use ground freeze-dried fruit or chopped fresh fruit.
