Unicorn Yogurt Bark

Magical unicorn frozen yogurt bark that is sweet, creamy and completely refined sugar free. Instructions

  • Add all ingredients except shredded coconut to a medium-size bowl and mix until fully combined.
  • Separate half of the yogurt mixture out into three separate bowls and color blue, pink and purple with dye-free India Tree food coloring.
  • Line a baking sheet with parchment paper and spread the white yogurt in an even layer, roughly a 1/2 inch thick.
  • Use spoons to dollop the colored yogurts all over the white until they are used up.
  • Use a butter knife to swirl through the yogurt. Swirl over the entire area, but do not swirl any extra or all the colors will start to blend together too much.
  • Optionally, sprinkle broken-up pieces of unsweetened shredded coconut all over the top of the yogurt for decoration.
  • Place in the freezer for about 6 hours or overnight until yogurt is completely frozen. Once frozen, cut into rectangles and store in an airtight container or sealed bag in the freezer for up to one month.
