This easy lemon cupcake recipe is a one-bowl, dump and mix kind of recipe. And it turns out delicious! But much more importantly, they are kid-approved 😀 And there’s nothing better than a recipe your kids love that is also ridiculously easy to make.

To be honest, when I first made these lemon cupcakes, I was pretty sure the recipe was doomed. Not because I didn’t think they would turn out, but because I have tried making lemon sweet treats for my kids before without success. I had just about given up on getting them to like homemade lemon baked goods.

But to my surprise, as soon as the first batch of these simple lemon cupcakes had cooled from the oven, my kids were all over them! I actually had to restrain them from eating too many since I was making them for our Easter meal with family.

Honestly, I think part of the reason this lemon cupcake recipe from scratch was such a hit with the kids is because the lemon flavor is not overboard. With natural lemon juice and lemon zest as flavoring, these cupcakes are sweet enough to appeal to little taste buds without an overwhelming tartness.

But perhaps an even bigger hit than the cupcakes themselves was the lemon cream cheese buttercream frosting I made to go on top 🙂 The frosting went over equally as well as the cupcakes (dare I say even better than the cupcakes?).

However, these moist lemon cupcakes were enthusiastically kid-approved even before they had any frosting on them. So whatever frosting you choose to use, the cupcakes themselves are sure to quickly become a favorite with your own kids as well.

With a number of other things I had going on, a holiday meal and an egg hunt to plan, I wasn’t even sure if I would get to make a dessert for Easter. But when I created this lemon cupcake recipe from scratch, it was so easy I even managed to make a second batch when the first one was half-eaten by my kids before the big day.

These lemon cupcakes with yogurt are also perfect for Mother’s Day when you deserve to keep things easy for yourself, but you also want to prepare a nice dessert for your own mom or for a family get-together.

Or think spring and summer kids birthday parties. Talk about exhausting events to plan and put on! Hosting a kids birthday party can be a lot of work on its own, but you can make the dessert part easy on yourself by dumping some ingredients in a bowl, giving it a mix and tossing it in the oven.

And of course, the fact that these are lemon flavored cupcakes also makes them perfect for all of the occasions I just mentioned. Lemon is synonymous with springtime, summertime, and all the holidays and events that happen during those seasons.

But also, kids are known for not respecting seasons when it comes to their taste buds. So if you make a batch of lemon cupcakes to satisfy your kids’ sweet tooth in the winter, I won’t judge 🙂

Ingredients

  • Yogurt: Plain, whole milk yogurt adds moisture and enhances the slightly tart flavor of these lemon cupcakes. Make sure your yogurt does not have any added sugars or flavorings. I like to use organic.
  • Lemon Juice: Fresh squeezed lemon juice provides the flavor behind these kid-friendly lemon cupcakes. You can also use lemon juice from a bottle if that’s all you have.
  • Lemon Zest: Lemon zest adds just a bit more lemon flavor.
  • Maple Syrup: Maple syrup beautifully sweetens this lemon cupcake recipe from scratch. Without using granular sugar, it can be hard to get the right texture and rise in cupcakes. But I find maple syrup to be an ideal alternative when you need a lot of sweetness without other flavors interfering. I like to use dark Grade A maple syrup.
  • Butter: Butter is a must when it comes to getting that satisfying texture and rise in cupcakes. I use Irish grass-fed or organic butter.
  • Eggs: Eggs are the binder in this recipe. I use farm-fresh, cage-free and/or organic eggs.
  • Flour: Any all-purpose flour will do for these lemon cupcakes. I use unbleached organic white flour from Costco.
  • Baking Powder: Baking powder amplifies the rise to create the perfect fluffy cupcakes.
  • Salt: Just a bit of salt helps to bring out the delicious flavor of these healthy lemon cupcakes.

Instructions

Step 1

Preheat oven to 350 degrees Fahrenheit and line a muffin tin with cupcake wrappers or spray with oil

Step 2

Add all ingredients to a medium-size bowl in the order listed. It’s okay if the lemon juice curdles the yogurt.

Step 3

Mix with an electric hand mixer until combined.

Step 4

Evenly distribute batter between muffin cups and bake for 16 minutes until a toothpick inserted in the centers comes out clean or with crumbs.

Step 5

Allow cupcakes to cool in the muffin tin for 15 minutes before removing. Store in an airtight container in the fridge until ready to frost. Make sure cupcakes are completely cool before frosting.
