Why These Cookie Sandwiches are Amazing
I’m not sure if I really even need to explain why chocolate sandwich cookies are amazing. I mean, what kid does not point to prepackaged sandwich cookies in the store and beg to buy them?
Only, these are not prepackaged, from the store, or full of refined sugar. And that – along with their irresistible creamy texture and chocolatey flavor – is what makes these sandwich cookies amazing!
If your child likes chocolate, whipped cream and cookies, he or she will love these. Beginning with my date-sweetened chocolate cookie recipe and ending with homemade, honey-sweetened whipped cream that tastes as good as the can from the store, this dessert will knock your kids socks off!
I first decided to make these after baking up a batch of my family’s favorite healthy chocolate cookies and realizing they were the perfect size and shape to make cookie sandwiches. All that was left to do was make a creamy filling, which is quite easy to do.
I created simple recipes for both vanilla whipped cream and chocolate whipped cream and put the cookie sandwiches together. It’s really that easy! And the result is indisputably decadent and crave-able. Your kids might have a hard time eating just one of these. And you might even let them have seconds since there’s no risk of a sugar rush with this naturally sweetened treat.
Something else that is wonderful about these easy cookie sandwiches is that they are quite versatile. There is potential to play around with the flavors and styling of these cookies for various occasions and preferences.
Use chocolate whipped cream for chocolate-lovers or use vanilla whipped cream dusted with chocolate shavings for a more decorative look for guests. Stack two cookies with one layer of cream or go big with three cookies and two layers of cream.
Make them neat by squeezing the whipped cream from a bag for a smooth, circular filling. Or, keep it fun and easy by plopping the cream on with a spoon. However you choose to assemble these healthy sandwich cookies, they will be a huge hit with all the kids in your life.
When to Make Chocolate Cookie Sandwiches
Chocolate sandwich cookies would be a delectable sweet to serve for many different occasions. Because they can be made several different ways, you can customize them to suit your purposes.
Birthday Breakfast. I like to make my kids a special birthday breakfast on their birthdays. What better way to start off your child’s birthday than with a little extra special breakfast treat like a 3-tiered cookie sandwich?
Holidays. Christmas, Valentine’s Day, Halloween – These homemade cookie sandwiches would be a great treat for holiday parties or for your own little celebration at home. Add a pop of color to your vanilla whipped cream with all-natural India Tree food coloring to coordinate with the holiday and you’ve got a healthy treat to counteract all those not-so-healthy holiday treats.
Family Game Night. I like to have game and movie nights with my older daughter as a special reward when she’s filled up a reward chart, and we always need super fun treats to go with our games. If your family does game nights or movie nights, these healthy, delicious cookie sandwiches are the perfect addition to make the evening extra fun.
The fact is, these sandwich cookies will be a welcome addition to any celebration you bring them to. Be prepared to be the favorite adult in the room!
Ingredients
Chocolate Cookies
- Date Paste: Dates are one of my favorite ways to naturally sweeten treats. Full of health benefits and perfectly sweet, they make the perfect sugar substitute in pureed form. Use my homemade date paste recipe or purchase date paste on Amazon or from Middle Eastern grocery stores. Store-bought is thicker than homemade and may need to be boiled or mixed with a little hot water to loosen and moisten it.
- Butter: Butter is a key ingredient in baked goods because it helps to prevent them from becoming dense or dry. I usually use organic or Irish grass-fed butter.
- Egg: Eggs add a bit of protein for nutrition and they are essential for binding the ingredients together. Any eggs will work, but I prefer to use farm-fresh eggs when available. Otherwise, I use organic and/or cage-free eggs.
- Vanilla Extract: Pure vanilla extract adds to and enhances flavor. Make sure you have pure vanilla extract and not a copycat, artificial vanilla.
- Flour: I use organic, unbleached flour, but any all-purpose flour will work.
- Cocoa Powder: Cocoa powder is the primary flavoring ingredient in these cocoa cookies. I often use cacao powder in lieu of cocoa powder Either cocoa powder or cacao powder will work just as well.
- Baking Powder: Just a smidge of baking powder – preferably aluminum-free baking powder – gives the cookies the slightest rise.
- Salt: Salt helps to enhance the incredible flavor in these chocolatey cookies.
- Collagen Powder: Optional collagen adds a little protein to the cookie along with many other health benefits of collagen. I love the Mama Natural collagen powder because it features six different types of collagen. That is more than most other collagen brands can boast.
Whipped Cream
- Heavy Whipping Cream: If you can use organic heavy whipping cream, that is the best for health purposes. But regular, non-organic heaving whipping cream works fine.
- Honey: You must use raw, unfiltered honey. Processed honey does not have as many nutrients and it is more liquid. Raw honey is thicker which helps add a little more body and fluffiness to the whipped cream.
- Vanilla Extract: Vanilla extract adds just that little bit of extra flavor to the whipped cream.
- Cocoa Powder: Cocoa powder is for the chocolate whipped cream. You can use the same cocoa powder as you use for the chocolate cookies.
Instructions
Step 1
Make the healthy chocolate cookies. This can be done ahead of time. make the cookies earlier in the day or a day or two ahead and store them in the fridge so they are cool for when it’s time to add the whipped cream.
Step 2
Make the fluffy whipped cream. This can also be done ahead of time. If you make your whipped cream ahead of time, it will firm up in the fridge which may make it easier to frost the cookies when the time comes.
Step 3
Assemble the cookie sandwiches.
Start with your bottom cookie up-side-down. If you want to keep it simple and a little sloppy-looking, just plop some whipped cream on the bottom cookie, dust with some chocolate shavings if desired, and place another cookie on top, bottom down.
For a more polished look, place some whipped cream in a plastic sandwich bag, seal and cut off one of the baggie’s corners. Squeeze the whipped cream out the corner hole and make a circle around the edge of the cookie, ending with a swirl in the middle. Place your top cookie on the cream.
If you want to make a triple-tiered cookie sandwich, repeat the frosting step again and place a third cookie on top.
Step 4
Decorate for display or serve on the spot! Remember to store these in the fridge if they are not being eaten right away.
Substitutions & Tips
- If you are worried about the messiness of these sandwich cookies, remember that the cream will firm up in the fridge. Once they are put together, place them in the fridge for a couple of hours to achieve a more stable cookie sandwich.
- If you are in a pinch, you could use store-bought whipped cream to use for the filling. If you do decide to do this, remember to use the whipped cream from the tub, not the kind in the can. The whipped cream in a can is too airy and will deflate and become runny easily.
- Make them ahead. Letting these cookie sandwiches sit in the fridge in a sealed container won’t hurt them and will even help them maintain their shape better. So go ahead and make them a few days before you need them!
- Decorate to make them prettier. Use chocolate shavings, crushed freeze-dried fruit or citrus fruit zest to add some decorative flair to your cookie sandwich delights.
- Serve deconstructed or with extra whipped cream for dipping. If you just don’t have time to make these look pretty for family game night tonight, no problem! These cookie sandwiches are just as fun deconstructed and dippable. Serve the chocolate cookies on a plate with a bowl of whipped cream on the side and your kids will find them just as tantalizing (maybe even more so) 🙂

Instructions
- Bake the chocolate cookies according to the instructions in the Chocolate Cookie recipe card. Allow to cool completely.
- While cookies are cooling, whip up your cream according to the instructions in the Whipped Cream recipe card. Store in the fridge if not using right away.
- Use a knife, spatula, cake decorating bag or sealed plastic bag to spread or pipe the whipped cream onto the bottom side of a chocolate cookie. Place another cookie on top of the cream, bottom side down.Repeat with all cookies.
- Store in the fridge in an airtight container for up to one week.
Notes

- It is helpful – although not necessary – to stick your whipped cream in the fridge for a bit before assembling your cookies. This will help it to stay cold longer and it will also firm it up a bit if left in the fridge for several hours.
