These homemade cookie sandwiches are a secretly healthy and indulgent treat. A big favorite with kids, these chocolate brownie cookie sandwiches are filled with homemade honey-sweetened whipped cream that is irresistible. An ideal treat for special occasions or just for fun, kids can't keep their hands off of these refined sugar free cookie sandwiches!
Bake the chocolate cookies according to the instructions in the Chocolate Cookie recipe card. Allow to cool completely.
While cookies are cooling, whip up your cream according to the instructions in the Whipped Cream recipe card. Store in the fridge if not using right away.
Use a knife, spatula, cake decorating bag or sealed plastic bag to spread or pipe the whipped cream onto the bottom side of a chocolate cookie. Place another cookie on top of the cream, bottom side down.Repeat with all cookies.
Store in the fridge in an airtight container for up to one week.
It is helpful - although not necessary - to stick your whipped cream in the fridge for a bit before assembling your cookies. This will help it to stay cold longer and it will also firm it up a bit if left in the fridge for several hours.
