The first time I made these, my 7-year-old went crazy for them. I had actually made several treats that day as a surprise for her when she got home from school. I had laid out a sheet on the floor and pulled out all the board games to play while we ate the after-school-snacks and treats.

At the time, I wasn’t even sure if these would have enough chocolate to satisfy my daughter’s selective taste buds, especially since there’s more peanut butter than chocolate in these frozen yogurt protein bites. I also wasn’t sure if she would love them because she is not currently a yogurt fan. I was pretty sure she was going to be more excited about some of the other things I had made.

But to my surprise, she gobbled these up and kept asking for more. And she still goes wild for them.

But these aren’t only going to be your kids’ favorite for taste, they will also be a favorite of yours for their nutritional benefits. Thanks to the yogurt and peanut butter, these frozen yogurt bites for kids have a solid protein count at 2 grams per one small square. When to Make & Use These Chocolate PB Frozen Yogurt Bites

The best time to make these frozen yogurt bites is right now. You know why? Because they will stay good in the freezer for a long time. And then they will be there when you and your kids need them.

If you make them now, then when your kids are begging for a yummy snack sometime next week when all the other snacks are gone and you’re wracking your brain for something they can eat that isn’t junk food, you’ll suddenly remember these.

You will pull them out of the freezer with as much excitement as the kids. And you will know you are presenting them with something they will drool over that will also fill them up with the right things.

Also, if you have protein yogurt bites just sitting in the freezer, your kids can easily grab some as a snack by themselves when you are too busy to get them one. This is exactly what has happened with my daughter on several occasions, as a matter of fact.

These also make great after-school-snacks. There’s nothing worse than having a hangry kid come home from school and you don’t know what to feed her. Frozen yogurt bites for kids are an ideal, fun hunger-buster to surprise your children with when they get home from school.

And, of course, anything frozen goes over really well in summertime.

Ingredients

  • Yogurt: Either whole milk plain yogurt or plain Greek yogurt works for these chocolate peanut butter frozen yogurt bites. But whichever kind of yogurt you use, it should be plain without any added sugar or flavors. It is also preferable to use organic yogurt for maximum health benefits without added hormones and antibiotics.

  • Peanut Butter: Use creamy, natural peanut butter with no sugar added. I like Kirkland brand peanut butter from Costco the best because it naturally has a bit of a sweet taste. However, any natural, no-sugar-added variety will work.

  • Cocoa Powder: Any minimally processed cocoa powder will be fine in this. I use cacao powder, but regular cocoa powder would work just as well.

  • Honey: You must use raw, unfiltered honey in this recipe. Not only is it much healthier than processed honey, but it is thicker and crystalizes and thickens when it is cold which adds to the body of the frozen yogurt bites.

  • Collagen: This is optional, but I like to use collagen for its gut health benefits. Personally, I know my older daughter has less physical complaints when she’s getting collagen regularly. Additionally, collagen adds a little extra protein. I use the Mama Natural brand because it contains the most types of collagen.

Instructions

Chocolate Layer

Step 1

Prepare a square 8×8 baking dish by lining with parchment paper. Make sure the parchment paper is large enough to reach beyond the edges.

Step 2

In a medium-size bowl, mix all ingredients together with a whisk or an electric mixer until fully combined and no globs of honey remain.

Step 3

Pour chocolate mixture into the square baking dish and evenly distribute with a spatula. Don’t worry about having a perfect square shape as this is difficult to do with bulges of parchment paper in the way. You can cut even edges later.

Step 4

Place pan in the freezer for one hour.

Peanut Butter Layer

Step 1

When the chocolate layer has been in the freezer for roughly an hour, mix up the peanut butter layer.

Step 2

In a medium-size bowl, mix all ingredients together with a whisk or an electric mixer until fully combined and no globs of honey remain.

Step 3

Pour the peanut butter mixture on top of the frozen chocolate layer and return to the freezer for at least another hour or overnight.

Step 4

When ready to serve or store in a container, lift the frozen layers out of the pan with the edges of the parchment paper.

Step 5

Using a sharp, large knife, cut off uneven edges on all four sides and then cut the remainder into small squares or rectangles.

Step 6

Store in an airtight container in the freezer for up to three months.

Substitutions & Tips

  • You can make these frozen yogurt bites with regular yogurt or Greek yogurt. I have made them both ways and it turns out just as good both ways.
  • Note that these must be made with raw honey from a jar, not the pourable honey that comes inside of a cute plastic bear. Raw honey is thicker and crystalizes, which gives the chocolate peanut butter frozen yogurt bites a sturdier structure. It also has more health benefits than processed honey.
  • I recommend putting parchment or wax paper on the bottom of your container and between layers of stored frozen yogurt bites. If they are placed directly in the container or on top of each other, they will get stuck. However, if this does happen, simply let them sit on the counter for 5-10 minutes to slightly thaw and then they will come out easier.
  • These thaw pretty quickly, so I do not recommend these as a take-and-go snack. You could try taking them to a picnic in a cooler with an ice pack, but do make sure to keep them as cold as possible.
