Naturally sweetened DYI frozen yogurt bites make the perfect chocolate and peanut butter dessert or healthy kids snack. Loaded with health benefits, sweet satisfaction and none of the junk, these homemade yogurt bites are the perfect frozen treat for after school and energy boosts.
Prepare a square 8x8 baking dish by lining with parchment paper. Make sure the parchment paper is large enough to reach beyond the edges.
In a medium-size bowl, mix all ingredients together with a whisk or an electric mixer until fully combined and no globs of honey remain.
Pour chocolate mixture into the square baking dish and evenly distribute with a spatula. Don't worry about having a perfect square shape as this is difficult to do with bulges of parchment paper in the way. You can cut even edges later.
Place pan in the freezer for one hour.
Peanut Butter Layer
When the chocolate layer has been in the freezer for roughly an hour, mix up the peanut butter layer.
In a medium-size bowl, mix all ingredients together with a whisk or an electric mixer until fully combined and no globs of honey remain.
Pour the peanut butter mixture on top of the frozen chocolate layer and return to the freezer for at least another hour or overnight.
When ready to serve or store in a container, lift the frozen layers out of the pan with the edges of the parchment paper.
Using a sharp, large knife, cut off uneven edges on all four sides and then cut the remainder into small squares or rectangles.
Store in an airtight container in the freezer for up to three months.
Notes
The collagen in this recipe is optional, but it does add some protein and gut health benefits. However, the recipe will turn out just fine if you omit the collagen.
You can use either plain whole milk yogurt or Greek yogurt for this recipe.
