My kids literally cannot get enough of this creamy strawberry popsicles recipe.
And, to be honest, I am surprised. Not because I don’t think they are good. But whenever I make a new recipe, it’s really a toss-up as to how it will go over with my kids. My 7-year-old is incredibly particular. My toddler is not so particular, but she’s still … a toddler.
And because this creamy strawberry popsicles recipe contains coconut milk, I wondered if my kids would be turned off by it. They aren’t the biggest fans of coconut. So when I first blended up a batch of the strawberry mixture, I tasted it and thought to myself, “Well, I like it, but we’ll see if they like it!”
I had made another strawberry popsicle recipe previously which my 7-year-old liked, but she said it tasted like jam in popsicle form. That’s not a bad thing since kids love jam, but it’s not the taste I was going for. I wanted it to taste like a strawberry popsicle, not strawberry jam.
So I created this creamy strawberry popsicles recipe as another attempt to achieve the perfect, naturally sweetened popsicle.
And when I gave them to my kids to try … well, let’s just say that first batch was gone within a day. And so was the next batch. And the next one.
We also happened to have my kids’ cousins over that first time I had made a batch, so I got to test the recipe out on them as well. I really didn’t expect them to go over nearly as well as they did! I think each child had almost two of these strawberry popsicles that afternoon.

The Best Times to Make These Frozen Delights
The best time to blend up a batch of this healthy strawberry popsicle recipe is in the evening after the kids go to bed.
You see, this way your kids won’t know about them until they are frozen enough to eat. Because if you make them during the day and the kids know you are making them, they will ask you about 25 times if the popsicles are ready yet until they are finally fully frozen a few hours later.
But besides the time of day, let’s talk about times of the year when you should make these.
These popsicles are just perfect on a hot summer day when your kids need something to cool them down.
Speaking of summer, these would also be a great addition to your 4th of July celebration, since they are rather patriotic with their red color.
And if you live somewhere that stays hot well into the school year like I do, you can keep making these popsicles past the official “summer” season.
I’m thinking about my 7-year-old going back to school in a couple of weeks and I am already dreading (on her behalf) the super hot 5-minute bus ride home from school. I plan to have some of these frozen treats ready to cool her down when she gets home from school.

Ingredients
- Frozen Strawberries: Frozen strawberries are the base of this creamy strawberry popsicles recipe. Any frozen strawberries will do, but make sure they do not contain added sugar.
- Date Paste: Using date paste instead of whole dates ensures that the popsicle mixture is completely smooth without lumps of dates. Here is my super simple recipe for homemade date paste. Alternatively, you can purchase date paste from Middle Eastern markets or from Amazon. You just might need to add a little hot water to loosen up store-bought date paste since it has less moisture than homemade.
- Coconut Milk: Coconut milk makes the popsicles creamy without any dairy. It also gives a hint of coconut flavor that is not overwhelming and combines beautifully with the strawberry and lemon flavors.
- Lemon Juice: Fresh-squeezed lemon juice gives these easy homemade strawberry popsicles just the right amount of tartness.
Instructions
Step 1
Add all ingredients to a single-serve blender and blend until everything is smooth and fully mixed.
Step 2
Pour or spoon mixture into popsicle mold and insert popsicle sticks.
Step 3
Place in the freezer for at least 3 hours or overnight.
Substitutions & Tips
- Whole, sliced or chopped frozen strawberries will work for this recipe.
- You can use the popsicle sticks that come with your popsicle mold, but I sometimes prefer to use good old-fashioned wooden popsicle sticks. It’s just easier to not have to wash them and it keeps them neutral if the colors of the plastic sticks don’t match the occasion.
- You could use bottled lemon juice instead of fresh-squeezed if it’s more convenient for you.
- You can use store-bought date paste if you don’t want to make your own. Store-bought date paste is thicker with less moisture in it, but because the popsicles have liquid, it should blend okay. If it is tough to blend, add a bit of hot water to help loosen up the date paste.
- To get the popsicles out of their molds after freezing, run the mold under very warm water for 20 seconds upside-down to loosen the bottoms and sides. Then wiggle them to loosen the sides some more. If you have a silicone mold, you can also push up from the bottom to help release them from the sides.

- 175 g strawberries frozen
- 200 g coconut milk
- 70 g homemade date paste
- 4 tsp lemon juice fresh squeezed
Instructions
- Add all ingredients to a single-serve blender and blend until everything is smooth and fully mixed.
- Pour or spoon mixture into popsicle mold and insert popsicle sticks.
- Place in the freezer for at least 3 hours or overnight.
Notes
- To remove popsicles from their molds, run them under very warm water upside-down for 20 seconds to loosen the sides.
