Perfectly delicious, this easy rice Kirspie treats recipe is made without marshmallows or refined sugar. Make them with tahini for a nut-free version or with almond butter. These are by far the best rice Krispie treats to healthily satisfy your kids' sweet tooth for breakfast, snack time or dessert. Optionally top with chocolate tahini buttercream frosting for a richer healthy snack.
Line a medium-size baking sheet with parchment paper. Make sure the parchment paper is large enough to reach past the edges of the pan.
In a small pot on the stove, melt the butter, tahini, honey and vanilla extract on low heat, stirring constantly until all ingredients are liquified and combined. Turn off heat.*See note.
If using collagen, mix into liquified ingredients.
To an extra large, heat-safe bowl, add the puffed rice.
Pour liquid ingredients over puffed rice and mix thoroughly until all puffed rice is evenly coated.
Pour puffed rice mixture onto the prepared baking sheet. Spread evenly on the sheet and press down with a spatula to pack the puffed rice together, creating an even surface. *See note for adding colors or frosting.
Place baking sheet in the freezer for at least one hour to set and harden the liquid ingredients.
Remove rice Krispie treats from freezer, lift the parchment paper off of the baking sheet and set it on a flat, solid, cut-safe surface. Using a large, sharp knife, cute treats into 16 rectangles. *See note for adding chocolate tahini buttercream frosting
Rice Krispie treats are best served straight from the freezer if your child likes them crunchy. For a softer, chewier texture, serve from the fridge or, if stored in the freezer, let sit on the counter for 10 minutes.
Store in an airtight container in fridge for up to one week or in the freezer for up to one month.
Notes
To preserve the beneficial bacteria and immune-boosting properties of the raw honey, you can optionally wait to mix it in until after you've melted the other ingredients together and allowed them to cool back down a bit.
If adding colored buttercream frosting to your rice Krispie treats for a sprinkled look, only pour half of the rice Krispie mixture onto the baking sheet. Using a pastry/cake decorating bag or a plastic sandwich bag with the corner cut off, squeeze little bits of different colors of frosting all over the layer of rice Krispie treats. Then, add the rest of the rice Krispie mixture, pressing it down firmly, and add more colored frosting to the top.
If you want to frost your rice Krispie treats with chocolate tahini buttercream frosting (or any other frosting), freeze your treats for at least an hour first so they are firm for spreading the frosting on top. Once firm, spread your frosting on top evenly. Place back in the freezer for a half hour to an hour before cutting if you want the frosting to be firm as well.
