Line two large or three small baking sheets with parchment paper.
To a medium-size bowl, add softened butter and date paste. Using a stand or hand electric mixer, mix until well combined.
To the butter and date mixture, add vanilla and egg and mix until combined.
In a separate bowl, mix together all dry ingredients.
Add dry ingredients to wet and mix until fully incorporated.
Using your hands, make the cookie dough into one-inch balls. Placing them on the baking sheets, press the balls down with your hand to slightly flatten them. They should be about a half inch thick.
Bake for 10-12 minutes.
Let the cookies cool before serving. Store in an airtight container on the counter for up to three days or in the fridge for up to one week.
