Refined sugar free chocolate covered bananas are one of the easiest and yummiest frozen treats for kids. Ideal as a summer cool-down treat or an anytime dessert, these healthy frozen chocolate covered bananas are a "yes" for parents and kids alike.
Peel your bananas and cut them in half. Insert popsicle sticks into the flat end of each banana half. Place bananas on a parchment paper-lined plate and place in the freezer for two hours.
Once bananas have completely frozen, prepare the chocolate. Melt unsweetened baker's chocolate and butter over low heat in a double boiler or a glass bowl inside a pot of water.Mix occasionally until everything has melted. Remove from heat.
After allowing the chocolate to cool for a few minutes, add in the honey and mix thoroughly to combine.Pour chocolate into a glass so the chocolate is deep enough to dip the bananas in.
Dip each banana into the chocolate, turning and tilting as necessary to get the entire banana coated in chocolate.Hold the dipped banana over the glass for a few seconds to allow excess chocolate to drip and to give the chocolate on the banana a chance to harden.
If you are using toppings such as chopped nuts, crushed freeze-dried fruit or coconut flakes, spoon these over each freshly dipped banana right away before the chocolate hardens.
Place dipped bananas back on the parchment paper-lined plate and return to the freezer for 10 minutes to fully harden chocolate before serving.Store frozen chocolate covered bananas in an airtight container for up to one month.

If you are planning to use toppings, make sure to have these all ready to go in separate bowls before you begin dipping your bananas. The chocolate will harden quickly on the frozen bananas, so you need to put the toppings on immediately after dipping.
You can use chopped nuts, crushed freeze-dried strawberries or unsweetened coconut flakes as sugar-free topping options.
